On April 7th, our club heard from Jen & Ryan McGunnigle, owners of Las Tortillas in Rosemount.
In spite of the shut down and loss of business, Jen & Ryan remained positive. A saving grace was that they had an online ordering process in place prior to the shut down which was a major hurdle for many restaurants. There were constant webinars with information coming in daily from the State of MN. Jen pointed out it was an opportunity to give the restaurant a facelift. Both Jen & Ryan are graduates of RHS and very community minded. During the shut down, realizing they did not want the food to go to waste, they decided to put together 50 meals and brought them to the Rosemount Family Resource Center....within 2 weeks, they were putting together 115 meals per day. They then started a nonprofit called the Las Tortillas Community Fund and continue to provided needed meals on Wednesdays. During COVID, they estimate that they have served 8000 meals to children.
It was great to hear their story. They turned a negative event into a positive one. Ryan & Jen are truly to be commended for their passion to serve the community and their love to cook, host, & eat good food. Check out LasTortillas and see why it is a favorite among many of the locals.
